鐵蛋者，
淡水小食也。始創者，黃張哞，賣滷蛋爲業。嘗因雨而無市，其蛋遂沸騰不斷，漸小而硬；旅客奇而食之，言之味異於凡品，故曰鐵蛋。亦有言楊碧雲製之者。
製之須有所俟，日必以醬油與
五香烹三時辰，復以電扇乾之，合一週，方成。
