蘭州拉麵者，
清真飲食也，俗謂牛肉麵。湯清若明鏡，其味辛辣，肉爛麵細，青蔥點綴。所謂一清、二白、三紅、四緑、五黃者是也。
民初，有回回人馬保子，家貧無以持生。乃以牛羊之肝，

煮成湆，配製拉麵。街巷廛里，行販叫賣，遂得財資，自營食肆。客甫入店，則立饋牛肉湯一碗，不取分文。其汁清澄甘爽，凝精明目，眾庶交讚，而負佳名焉。
