速食店，一名駃餐店

蘭州拉麵等，皆是也。食客指餐，須臾供應，故稱速也。店家例備食品，預調爨保溫，卒依所需配合之而已。此法尤見今世，然古已有之，若東亞之麵館，

大秦之麵包橄欖等，城而不同。今中式快餐，則勃興乎二十世紀之末，除舊有之人差，置之以標準、機械，策進衛生，靚飾環象，漸漸聞名。學者或以養衞之義譏之，然民望不減，又廚法日新，速食而不傷身者，非罕覯事也。
