壽司之類
鮨（）者，
和食也，
宛字曰壽司。以醋浸飯，或和魚肉蔬菜而食之。類多矣。壽司之料，或生或烹，故或有海獸胃線蟲於間，食則病矣。依歐盟之律，速凍生魚於零下二十度，經一晝夜，則蟲死滅，生魚可食也。
來由
素謂鮨、鮓，入貢宮內時，謂壽司
。
日本釋名、
東雅皆謂之酸也。和言酸音近壽，蓋如是也。
類別
鮨有多種，今之謂鮨者，
江戶前鮨也。復有卷鮨、
稻荷鮨、
熟鮨、
押鮨諸類，各相差異。
辨名
鮨者，一魚之名也，似鯢；一古魚醢之謂。《爾雅·釋器》：「肉謂之羹，魚謂之鮨」。東瀛假其字以表壽司，訓讀。又作鮓、寿（）。
